1 chopped onion
2 chopped celery stalks
1 washed and chopped leek
2 peeled and sliced carrots
2 peeled and cubed potatoes
2 minced garlic cloves
14 oz. diced tomatoes
2 tbsp. apple cider vinegar
1 tbsp. sugar
7 cups chicken broth
1 cup green lentils
½ tsp. oregano
1 bay leaf
Salt and pepper to taste
Directions:
Fry the bacon in a soup pot for 5 minutes, until the slices are crispy.
Discard all but a tbsp. of bacon fat.
Stir in the onions, celery carrots, potatoes, and garlic and sauté for 5 minutes.
Add the remaining ingredients and stir well.
Bring the liquid to a boil, then reduce the heat to a simmer.
Simmer for 1 hour 15 minutes, or until the lentils are done.
Discard the bay leaf.
